Ron Zacapa XO Rum is a blend of rums aged between 6 and 25 years in a variety of barrels, including bourbon and sherry casks, and then finished in French oak casks that previously held Cognac. The rums are produced from the first pressing of sugar cane juice, rather than molasses. Zacapa XO has a smooth finish with aromas of toasted oak, burnt caramel, dry roasted nuts, marzipan, orange peel, and a deep fruit note. It has a sweet taste with notes of fruit, spice, and spirit, and a finish of dried mango, raspberry, and ginger. Zacapa XO pairs well with dark chocolate
